Aubergines are excellent vegetable plants for home growers, producing attractive fruits with delicate flavours and a long harvesting season. Aubergine 'Italian White Casper' stands out with its smooth, ivory-white fruits that resemble oversized eggs. Harvested from mid-summer through to autumn, the fruits typically grow to 15–20cm long and have a mild, slightly mushroom-like flavour. They are particularly well-suited to slicing, roasting or grilling. Plants perform superbly in greenhouses, raised beds and sheltered vegetable patches, complementing both cottage and modern gardens.
Thriving in fertile, moisture-retentive but well-drained soil and a warm, sunny, sheltered position, 'Italian White Casper' requires steady warmth and regular moisture for best yields. Plant after all danger of frost has passed and water thoroughly during dry spells. Feed every two weeks with a balanced fertiliser during the growing season and remove any ageing foliage as necessary. Harvest fruits while the skins remain smooth, creamy white and glossy, before they begin to yellow.
